Vegetarian Chilaquiles

If you’ve never heard of chilaquiles (pronounced chee-lah-Kee-lehs), this recipe is about to change your life. Am I being over dramatic? I don’t think so. I have loved chilaquiles since first having them in Mexico maaaaany years ago. I used to order them in restaurants constantly but I got fed up with being served a soft tortilla casserole (not chilaquiles). I quickly learned that we needed a way to make this delightful brunch dish at home. Once again, Jason is the mastermind behind this recipe and it has never failed us!

Vegetarian Chilaquiles

Ingredients
  

  • 2 tbsp olive oil extra virgin
  • 1 yellow onion diced
  • 1 cup poblano peppers diced
  • 8 cloves garlic minced
  • 20 oz green or red enchilada sauce
  • 12 oz lager beer*
  • 1 bag El Milagro tortilla chips

Garnish (Optional)

  • avocado sliced
  • cilantro leaves chopped
  • red onion sliced
  • 4-6 eggs fried
  • refried beans
  • pico de gallo

Instructions
 

  • In a large dutch oven or pan, heat olive oil over medium-high heat.
  • Add onion and poblano peppers. Mix well and stir occasionally for 3-5 minutes.
  • Add garlic and mix well. Heat for 3-5 minutes.
  • Add enchilada sauce. Simmer for 10-15 minutes, stirring occasionally.
  • Add lager beer. Simmer for 10-15 minutes, stirring occasionally. Allow for the alcohol to boil out of the sauce.
  • Prepare your garnishes while the sauce thickens.
  • Mix in chips and cover them with sauce. Add chips as you go to avoid breaking them as you mix.
  • Serve hot and garnish as desired. Enjoy!
