Spicy Poblano Pepper Pasta

I probably sound like a broken record at this point, but I’m extra excited to share this recipe with you all today. This Spicy Poblano Pepper Pasta is one of the easiest and tastiest dishes that I’ve ever made! For real. I created this recipe after I was stuck at the grocery store without my typical meal-planning checklist (one of my least favorite situations to be in). I was looking for inspiration when I saw a display of Poblano peppers on sale. After that, I let my eyes guide me to find the other colors and flavors in this dish.

Don’t let “spicy” in the title scare you. The only real heat in this recipe is provided by one Manzano pepper. Manzano peppers have a fruitier, smokier, slightly spicier flavor than jalapeño peppers. This recipe combines spicy Manzano peppers with sweet orange bell peppers and savory Poblano peppers. The final product is filled with delicious, rich flavor and just a little bit of kick.

Spicy Poblano Pepper Spaghetti

  • 1 tbsp olive oil extra virgin
  • 6 cloves garlic minced
  • 4 shallots sliced thinly
  • 1 Manzano pepper optional, deseeded and sliced thinly
  • 3 Poblano peppers deseeded and sliced thinly
  • 2 orange bell peppers deseeded and sliced thinly
  • 32 oz marinara sauce
  • 16 oz spaghetti store-bought or homemade
  • Parmesan cheese for garnish


  • In a large non-stick pan, heat olive oil over medium heat for 1 minute.
  • Add garlic and shallots to pan. Saute for 4-5 minutes, until fragrant and soft.
  • Add Fresno peppers, Poblano peppers, and orange bell peppers to pan. Mix well and cover. Saute for 5-7 minutes, until soft. Meanwhile, cook spaghetti.
  • Add marinara sauce and drained spaghetti to pan. Mix well.
  • Top with Parmesan cheese. Serve hot and enjoy!
