One of the best things for making the cold weather in Chicago bearable is a hearty, steaming bowl of hot soup. This recipe is perfect for the cold weather. It features pearl onions, bok choy, mushrooms, garlic, ginger, and tofu. The secret to making this soup taste so great is the star anise seed. Star anise is a Chinese and Vietnamese spice that creates a sweet, yet spicy, licorice flavor in any dish. It is perfect in this Asian-inspired recipe and one of my favorite winter-time ingredients.

Ginger & Garlic Bok Choy Soup
Sweet and spicy soup featuring soft pearl onions, bok choy, mushrooms and extra firm tofu.
Ingredients
- 1 tbsp olive oil extra virgin
- 6 garlic cloves minced
- 2 tbsp ginger minced
- 1 bunch green onions chopped with the green and white parts separated
- 2 whole star aniseed
- 10 oz white mushrooms sliced
- 14 oz extra firm tofu pressed, drained, and cubed
- 2 tbsp soy sauce
- 2 tbsp chili garlic sauce
- ¾ tsp salt
- 5 cups vegetable broth
- 2 cups pearl onions frozen and unpeeled
- 6 heads bok choy cut into bite-sized pieces
Instructions
- In a large cast iron pot, heat the olive oil, garlic, ginger, and white parts of green onions over high heat for 2-3 minutes.
- Add star aniseed and mushrooms. Saute for 5 minutes, until brown.
- Add the tofu, soy sauce, chili garlic sauce, salt, and vegetable broth. Simmer for 10 minutes.
- Add pearl onions and bok choy. Simmer for 5 minutes.
- Garnish with Sriracha and green onion. Serve hot and enjoy!
