Creamy Tomato Soup

Few meals have brought me as much comfort as a warm bowl of homemade tomato soup and a crispy grilled cheese sandwich. I remember this meal was a classic lunch recipe in my household growing up. It was always a favorite of mine! Lately, life has been a little busy lately and I found myself needing this simple comfort meal more than ever. It was so fun (and honestly, easy) to make. I feel like a good bowl of soup melts all my troubles away! Plus, it was about time for me to give tomato soup a stab for the blog… I think you guys are going to really like this one!

Creamy Tomato Soup

Ingredients
  

  • 6 large tomatoes quartered
  • 1 cup cherry tomatoes
  • 6 cloves garlic peeled
  • 1 yellow onion diced
  • 1 red bell pepper diced
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • ½ tsp garlic powder
  • 2 cups vegetable broth
  • 4 oz tomato paste
  • ½ cup oat milk creamer
  • 2 tbsp fresh basil
  • Parmesan cheese
  • croutons

Instructions
 

  • Preheat the oven to 450°F.
  • Combine tomatoes, garlic, onion, bell pepper, olive oil, salt, black pepper, and garlic powder in a mixing bowl. Mix well and transfer to a large baking pan.
  • Roast for 30 minutes. Broil for 3-4 minutes to char some of the tomatoes.
  • In a large dutch oven, bring vegetable broth and oat milk to a boil. Add tomato paste, roasted vegetables and fresh basil. Blend using an immersion blender.
  • Garnish with Parmesan cheese, additional basil, and crispy croutons. Serve hot and enjoy!
