With the chilly Fall weather becoming a more consistent and permanent part of our lives, I’ve been craving all the soups! Ramen is typically my go-to when we are out of food (we all have our guilty pleasures) — but one of my favorite things is making “fancy Ramen” for dinner. It’s easy, packed with delicious vegetables, and so tasty! If you are looking for a quick, warm, weeknight meal… this one is for you!

Creamy Thai Vegetable Soup

Ingredients
  

  • 1 tbsp olive oil
  • 3 cups mushrooms cleaned and sliced
  • 6 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ½ tbsp paprika
  • ¼ tsp ground coriander
  • ¼ tsp cayenne pepper
  • 1 cup thinly sliced carrots
  • 8 cups vegetable broth
  • 1 cup 1-inch pieces green beans
  • 1 cup snow peas
  • 1 cup broccoli florets
  • 4 oz dry brown rice noodles
  • 13.5 oz coconut milk
  • 1 lime juiced
  • salt to taste
  • ground black pepper to taste

Garnish

  • green onions
  • soft boiled eggs
  • Sriracha

Instructions
 

  • In a large dutch oven, heat olive oil over medium heat. Add garlic and ginger. Saute for 3-4 minutes, until soft and fragrant.
  • Add garlic powder, onion powder, paprika, coriander, cayenne pepper, and sliced carrots. Mix well and heat for 3-4 minutes over high heat.
  • Add vegetable broth and green beans. Bring to a boil, then reduce heat and simmer (uncovered) for 5 minutes.
  • Add snow peas, broccoli, and noodles. Simmer for 5-7 minutes, until noodles are cooked.
  • Add coconut milk, lime juice, sea salt, and black pepper. Mix well.
  • Garnish and enjoy!
