Baking has never really been “my thing” — that was true at least until quarantine started. I’ve always avoided baking because I’m not much of a recipe follower (who, me?!) and also because I can’t control myself around baked goods. But here we are… some 70 days into our isolation-in-place order and I am all about homemade treats. These chocolate peanut butter bars were inspired by my mother-in-law’s recipe. Each year we make about 30 different cookie recipes for Christmas and her chocolate peanut butter bars are always my favorite. They’re completely addicting and I honestly apologize for this guilty pleasure. We all deserve a little indulgence, though! Am I right?!

Chocolate Peanut Butter Bars
Equipment
- Food Processor
Ingredients
- 8 sheets of graham crackers
- ½ cup unsalted butter melted
- 2 cups confectioner's sugar
- 1 cup + 2 tbsp creamy peanut butter divided
- 1 cup semi-sweet chocolate chips
Instructions
- Line a 13 x 9-inch glass baking pan with parchment paper. Set aside.
- Blend graham cracker sheets in food processor until crumb-sized.
- Add butter, 1 cup peanut butter, and confectioners’ sugar to food processor. Blend until fully combined. Press evenly into the bottom of the prepared baking pan.
- Melt 2 tablespoons of peanut butter with the chocolate chips in a double-boiler or in the microwave. Stir until smooth. Spread over peanut butter layer.
- Chill in the refrigerator until completely firm (about 2 hours). Cut into squares and enjoy!
